WHere is a home-style take on a beverage found on the seasonal menu. Designed as a party-sized premix which is loaded with the flavours associated with Christmas time, rendering it perfect for your celebration. Any leftover syrup for morning drinks, sweets, or for additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Put every ingredients inside a pan, heat until it reaches a gentle boil, stirring to dissolve. After that, remove from the stove and let it to cool fully. Pour into a sealable bottle, seal and store in the refrigerator, where it will keep for up to a month.
To make Batch Mix: Combine the specified liquids in a sizeable container, let it rest for 60 minutes, then pass it through best through cheesecloth, to ensure it's fully clarified.
To serve: Measure 85ml of your cocktail base to a cocktail shaker filled with ice, and agitate gently for about 60 seconds until cold. Filter into an chilled martini glass or similar, garnish with some cranberries and finish by giving it a light spray with the mandarin essence over the top.
